1 1/2 lbs red potatoes (diced)
3/4 c. milk
1/2 tsp salt
1/4 tsp ground pepper
1 tsp olive oil
2 cloves garlic (minced)
1 carrot (chopped)
1 onion (chopped)
1/2 lb white or cremini mushrooms
1 lb ground turkey
1/4 tsp dried thyme leaves
2 1/2 tbsp flour
1 c. chicken broth
1/2 lb green beans (chopped and lightly steamed)

Preheat oven to 400║. Place potatoes in a saucepan, cover with water and boil. Simmer until fork tender (10 - 12 minutes), drain and mash with milk, salt and pepper. Heat large nonstick skillet, sautÚ garlic, carrot, onion and mushrooms until soft. Add turkey meat and thyme, cook until no longer pink (5 - 8 minutes). Stir in the flour, cook for 2 minutes. Stir in the broth, cook until thickened (2 minutes). Transfer the turkey and veggies to a shallow casserole. Top with beans and spread potatoes on the top. Bake until the potatoes are heated through, about 5 minutes.
