1 1/2 cups shredded Monterey Jack cheese
1 1/2 cups shredded cheddar cheese
3 oz cream cheese, softened
1/4 cup salsa
1 tsp cumin
1 medium bell pepper, diced
1/2 cup onion, diced
8 large tortillas

Directions:
Directions:
Mix 1 cup each of Monterey and cheddar cheese, cream cheese, cumin, salsa, pepper, and onion together. Place in divided amount in center of tortillas, roll and place in greased 9x13 baking dish. Layer extra cheese and more salsa on top of enchiladas and bake at 350 for about 20 minutes or until cheese is melted. May also use shredded lettuce, olives, tomatoes, ect. for toppings after it has baked.
