13 egg whites, room temperature,
pinch salt,
1 3/4 tsp. cream tartar,
1 3/4 c. sugar,
1 tsp. vanilla,
1/2 tsp. almond flavoring,
1 1/4 c. cake flour.

Directions:
Directions:
sift flour and sugar separately. Beat egg whites and salt until foamy, add cream tartar and beat until stiff. Add sugar, small amounts at a time. Add flavorings. Take away from mixer and by hand with a wire whisk, fold in flour 2 to 3 T. at a time. Pour gently in an ungreased angel food cake pan. Cut gently with a silver knife through batter. Bake at 350 for 30 minutes. Invert on a board until cool. TOPPING: In a medium size heavy skillet put 3 egg yolks, beaten until thick and lemon colored. Add 1 c. sugar, 1/2 c. orange juice. Cook until thick, stirring constantly. Stir in 2 tsp. grated orange rind. Cool. Fold in 1/2 pint of cream whipped.
