1 Angel Food Cake
4 eggs, separated
1 c. sugar, divided
6 T. lemon juice
grated rind of one lemon
1 1/2 tsp. gelatin
3 T. cold water

Directions:
Directions:
Beat yolks in double boiler; add 1/2 c. sugar, lemon juice and rind. Cook until thick. Dissolve gelatin in cold water for 5 minutes. Add slowly to hot mixture. Cool.

Beat egg whites until stiff while slowly adding 1/2 c. sugar. Fold into lemon mixture after it is cold.

Remove brown crust from the cake by rubbing it off.
Break cake into small pieces into oiled spring form pan. Place a layer of cake, then a layer of custard; repeat. Refrigerate overnight. Unmold on a cake plate and frost with sweetened whipped cream. Garnish with fruit.
