1/2 cup butter
2 bunches shallots, chopped fine
2 ribs celery, chopped fine
1 lb. peeled crawfish tails
2 minced garlic cloves
1-2 med. onions, chopped fine
1/2 med. bell pepper, chopped fine
2 cans cream of mushroom soup
Cayenne to taste
1 whole pimento, chopped fine

Directions:
Directions:
Chop in bite size pieces cleaned and peeled crawfish tails. Melt butter in saucepan. Add onion, shallots, green pepper and celery. Cook over low heat until soft. Add soup, heat through. Add crawfish, red pepper, and garlic.
Heat for 20-30 min. or until crawfish are cooked. Add pimento just before removing from heat. Serve with favorite crackers of chips. Crawfish may be substituted with 1 lb. shrimp or crabmeat.

This is really pretty serve in hollowed out (small individual) bread bowls and served with tortilla chips.
