2 lbs boneless chicken, diced
1/4 cup butter
2 medium carrots, coarsely grated
2 celery stalks, finely chopped
4 green onions, thinly sliced
1 can mushrooms (opt)
1/4 cup flour
2 cups chicken stock
2 cups heavy cream
3 cups cooked rice
1 1/2 cups coarsely grated Swiss cheese
1 1/2 cups coarsely grated cheddar cheese

Directions:

Preheat oven to 450. In a heavy skillet, saute the chicken in butter over medium heat until cooked through. Stir in the vegetables and saute just until tender. (About 2-3 minutes) Add the flour, chicken stock and cream. Simmer until thickened. Spread the rice in a greased 9x13" baking dish. Pour the chicken mixture over it and sprinkle with grated cheeses. Bake in oven 6-8 minutes or just until cheese melts. Makes 8-10 servings.
