3 c. flour
3 1/2 c. vegetable oil
2 c. each of chopped onion,green pepper and celery
2 gallons water
8 lg. ducks,cut into serving pieces and browned
5 T. salt
2 tsp. black pepper
1 tsp. red pepper
Tabasco to taste
2 lb. smoked sausage
3 T. file'
1/2 c. chopped green onions

Mix flour and oil,then make your roux. Remove from fire and add onions,green pepper,and celery. Add water - small amounts at a time. When all water has been added, return to fire, then cook until ready. Add sausage the last hr. of cooking. Season to taste again, then add chopped onion tops and file' just before serving. Serve over rice.
