1 lb Monterey Jack grated
9 lasagna noodles cooked
2 pkg, frozen chopped spinach. Thawed and well drained.
1c Parmesan cheese
32 oz of cottage cheese
2 eggs.
1 tbsp chopped parsley or cilantro
Salt, pepper and garlic powder to taste.

Mix cottage cheese, seasonings, butter and eggs. Grease lasagna pan.Layer noodles, 1/3 of cottage cheese mixture, 1/3 Monterey Jack, 1/3 of spinach and 1/3 of Parmesan cheese. Repeat layers.
