6 medium red potatoes unpeeled
6 slices of bacon cut into 1/2 inch pieces
1/2 chopped white onion
1 &1/2 tsp salt
3 tbsp white sugar
1 tsp flour
3 tbsp red wine vinegar
1/2 c water
1/8 tsp black pepper
minced parsley for garnish

Directions:
Directions:
Boil potatoes in water for 30 minutes or until tender
Drain potatoes,when slightly cool, peel and dice, put in a large salad bowl and set aside.
In a heavy skillet, brown bacon until crisp, remove bacon and drain on paper towels, reserving 2 Tbsp of bacon fat. Add onion cook until tender, stir in sugar, salt, flour and black pepper. Mix until well blended, stir in vinegar and 1/2 c water. Cook stirring until slightly thickened, and boiling, stir in potatoes and bacon. Heat Through.
