1/4 tsp salt
1/2 cup pistachio nuts
1/3 cup butter
1/3 cup brown sugar
1 1/2 tsp fresh thyme
3 lbs carrots, chopped and cooked until just tender

Directions:
Directions:
Drain carrots and set aside. Bake pistachios on baking pan for 8-10 minutes until lightly toasted. Set aside. Melt butter over medium heat. Add brown sugar and thyme, stirring until brown sugar is melted. Add drained carrots. Bring just to boiling and reduce heat. Cook uncovered over low to medium heat for about 10 minutes or just until carrots are well glazed. Stir occasionally. Transfer carrots to a serving bowl or platter. Sprinkle with toasted pistachio nuts.
