4 medium sized potatoes 1/4-1/2 cup olive oil 1/2 cup Parmesan cheese 1/2 tsp pepper 1 Tbsp each of rosemary and chives 1 tsp each of oregano, garlic salt, thyme leaves
Cut potatoes into small cubes, leaving skins on. Place in bowl and pour olive oil over potatoes. Place on baking pan. Mix Parmesan and spices together and sprinkle over potatoes. Bake at 375º for 1 1/2 hours, stirring occasionally.
