1 1/2 c. (7 1/2 oz.) GF flour
1 tsp. xanthan gum
1 c. ( 7 oz.) sugar
1 tsp. baking soda
1/4 tsp salt
1/2 c. (2 oz.) Dutch-processed cocoa powder
2 oz. bittersweet chocolate chopped fine, (Nestle pre-melted unsweetened)
1 c. hot coffee
2/3 c. mayonnaise
2 large eggs
2 tsp. vanilla extract
Confectioners' sugar (optional for serving)

Whisk all dry ingredients together. In separate bowl, combine cocoa, chocolate, and hot coffee. Whisk until smooth. Let cool slightly and whisk in mayo, egg, and vanilla. Add these wet ingredients in to dry ingredients and stir until just combined. Pour into a 7x11" or 8" square pan. Bake at 350 for 30-35 minutes, until toothpick comes with only a few crumbs attached. Let cool. Dust with confectioners' sugar.
