2 1/2 lb. chicken breasts, skinned and quartered
1/2 head of garlic peeled and pressed (I don't use that much)
1/4 c. dried oregano
coarse salt and pepper
1/2 c. red wine vinegar
1/2 c. olive oil
1 c. (jar) pitted prunes
1/2 c. (jar) pitted Spanish olives
1/2 c. ( jar) capers with a bit of juice
6 bay leaves
1 c. brown sugar
1 c. white wine or more
1/4 c. finely chopped parsley

In large bowl mix chicken, garlic, oregano, pepper, salt, vinegar, olive oil, prunes, olives, capers and juice, and bay leaves. Cover and refrigerate overnight to marinate.

Preheat oven to 350. Put chicken in single layer in shallow pan and spoon marinade over it evenly. Sprinkle with brown sugar and pour white wine over all. Bake 50-60 mins, basting frequently. With slotted spoon, transfer to serving platter. Sprinkle with parsley. Pass remaining juices in sauceboat. May be served hot or warm. Good served with risotto, rice or wild rice.
