1 head cauliflower
1 head iceberg lettuce
1 onion, chopped
1 pound bacon, crisply fried and crumbled
1 1/2 c. mayonnaise
1/4 c. sugar
1/3 c. Parmesan cheese

Directions:
Directions:
Chop cauliflower and lettuce quite fine and mix with onion and bacon. Put in a 9" x 13" Pyrex pan. Mix mayonnaise, sugar and Parmesan cheese and pour over the salad. Allow to stand several hours before serving. The salad will shrink after it is mixed.

Mom used to make this. It is in the Midwest Junior League Cookbook and listed there under Fargo - Moorehead.
I have added a couple of tablespoons of vinegar to the dressing because Paul loves vinegar. Also, there is a restaurant in Savannah that has a similar Chop Salad on their menu; however, it has horseradish in it; so, I have tried putting horseradish sauce in for part of the mayo and a little extra straight horseradish. It isn't necessary as the recipe is good as printed but the little extra zip is good also!
