1 lb. beef round steak
2 T.. flour
1 T.. cooking oil
1 - 16oz can diced tomatoes
1 small onion sliced and separated into rings
1/2 cup celery
1/2 cup sliced carrot
1/2 tsp. dried thyme, crushed
1/4 tsp. salt
1/4 tsp. pepper
2 cups hot cooked rice or noodles

Directions:

Cut meat into 4 serving size pieces. Trim fat. Combine the flour, 1/4 tsp. salt and 1/4 tsp. pepper. With meat mallet, pound flour mixture into meat. In a large skillet, brown meat on both sides in hot oil. Drain fat. add undrained tomatoes, onion, celery, carrot and thyme. Cover and bake at 325 - 350 for 1 hour and 15 minutes or till meat and veggies are tender. Serve over/with hot rice or noodles.
