32 oz. country style hash brown potatoes
1/2 c. chopped onion
1 can cream of chicken soup
2 c.grated cheddar cheese
1/2 c. butter
1 tsp salt
1 pint sour cream (low-fat works well)
1/4 tsp pepper

Directions:

Mix all ingredients together. Pour into greased 9x13 casserole dish. Top with 1/2 c. melted butter and 2 c. crushed cornflakes. Bake 350 for 1 hour
