4 cups spinach
2 large mushrooms, sliced
1/4 cup onion, diced
2 cloves garlic, crushed
1/4 cup white vinegar
1/4 cup water
1/4 cup Dijon mustard
3 Tbsp sugar
4 slices ham (or turkey bacon) diced
1 Tbsp crushed croutons

Directions:
Directions:
Arrange two cups spinach and mushrooms on each of two plates. Fry ham, onions and garlic until browned. Add vinegar, water, mustard and sugar. Simmer 1-2 minutes. Pour over spinach. Toss and top with crushed croutons. Serve hot. Serves 2.
