1/3 c lemon juice
1/2 cup sugar
1/4 tsp nutmeg
1/2 tsp cinnamon
4 C zuchini (seeded, peeled and sliced thin)

Pie crust:
2 c flour
3/4 c sugar
1/4 tsp salt
3/4 c butter

Directions:
Directions:
Mix the pie crust ingredients until crumbly and set aside. Simmer the rest of the ingredients in 1 cup of water until thoroughly cooked, about 25 min. Add 1/4 cup of the pie crust mixture and let cool.

Pat half the crust into a 9x13 pan, bake at 375 for 15 min. Fill with the zuchini filling and sprinkle remaining crust on top Sprinkle with cinnamon and bake at 375 for 30 min.

This seriously tastes just like apple crumb pie, you would never guess it was zuchini! Every time I serve it, nobody believes it and it is really good warm with ice cream.
