6 Chicken Breasts, skinless, boneless
2 cans Cream of Chicken Soup
1 c. Mayonnaise
1 1/2 tsp. Lemon Juice
1/2 tsp. Curry Powder
1 c. Sharp Cheddar Cheese, grated
1/2 c. Bread Crumbs
2 pkgs. Frozen Vegetables; Broccoli, Asparagus, Green Beans

Directions:
Directions:
Preheat Oven to 350. Cook Vegetable according to package directions; lay evenly over bottom of buttered 9" X 13" pan. Next layer chicken over top of Vegetables. Mix Soup, Mayonnaise, Lemon Juice, Curry Powder, and half the Grated Cheese. Pour over Chicken and sprinkle the Bread Crumbs evenly, followed by the remaining Cheese. Bake for 30 minutes until heated through.

This recipe can be modified with different flavors of cream soup, different cheeses such as jack, parmesan or swiss. It can be lightened up by using Light Mayonnaise, Low-fat cheese, and Low-fat and Low-sodium Cream Soup.
