4 med potatoes-cubed 1 large onion-diced 1 qt boiling water 4 Tbsp butter 3 Tbsp flour 1/2 C milk 1 C shredded cheddar cheese Salt and pepper to taste Sprinkle of parsley
Prepare onion and potatoes. Simmer in boiling water until tender. Melt butter in skillet then add flour, heating slowly until it bubbles. Stir in milk and cook until it thickens. Stir in potatoes and onions and bring to boil. Add cheese and simmer until thick. Season.
