2 1/2 C flour
2 C sugar
2 Tbsp cinnamon
2 tsp salt
2 tsp soda
1 1/2 C cooking oil
4 large eggs
3 C finely chopped carrots

4 oz softened cream cheese
2 C powdered sugar
1/4 square butter (soft)
2 tsp vanilla and coconut if desired

Mix all dry ingredients together. Add cooking oil, eggs, and carrots. Mix well. Nuts and crushed pineapples can be added if desired. Bake at 350 for 45 minutes. Let cool and frost.
