6 - 8 (med.) summer squash, sliced
2 onions, sliced
1 lb. bulk sausage, hot
2 eggs
1 (5.3-oz.) can evaporated milk
1 tsp. salt
1/2 tsp. pepper
1 c. cheese, grated
1 tsp. poultry seasoning
1 stick Ritz Crackers

Directions:
Cook squash & onions in small saucepan, covered, until done. Drain. (Should be about 4 c. squash & onions). Cook sausage crumbled until done, not brown. Mash squash mixture. Place a layer of squash mixture & sausage in greased baking dish. Add 1/2 the cheese. Mix eggs, milk and seasoning. Pour 1/2 of egg mixture over cheese. Layer again, squash, cheese, egg mixture. Top with crushed Ritz crackers. Bake at 350║ for 25-35 min.

Russell is the son of Sondra (Johnston) and Karl Finkbeiner & the grandson of Jeane (Hollenshead) Finkbeiner & the late Charles Finkbeiner. This recipe is one of my favorites in the summer when squash is plentiful in the garden.
