1 packet Basco Gluten-free Bread Mix
1 egg
1 cup water
100g-200g diced bacon (to your liking)
1 small onion, diced
1/2 cup grated cheese (to your liking)
1 tsp or more mixed herbs (to your liking)

1/2 cup diced bacon, extra for topping
1/2 cup grated cheese, extra for topping

Directions:
Directions:
Preheat oven 180. Line 2 x regular muffin trays with muffin liners or grease. (Mini muffins trays are also great for children.)

Combine bread mix, egg, water, bacon, onion, cheese and mixed herbs, in a bowl until fully combined. You may need to add a little more water if mixture is too stiff.

Spoon into muffin trays, add the extra bacon and cheese over each muffin.

Bake in moderate (180) oven for 30mins or until browned.

Makes about 18 regular muffins.

An excellent quick recipe that is "gluten-free" - for those who are coeliac, or avoiding gluten, and even if you're not! Basco bread mix does contain milk products, so not suitable for dairy-free.
The Basco Bread mix can be purchased in the healthfood section of most supermarkets.
