1 large head of iceberg lettuce, chopped.
1 large tomato, chopped.
1 large white onion, chopped small.
1 green pepper, chopped small.
1lb of ground beef browned with taco sauce, (we use Ortega mild).
1lb of cheddar cheese shredded.
1 c. cilantro chopped
1 can black beans, drained (optional)
1 bottle of Western dressing
1 bag of broken up Nacho cheese tortilla chips

Directions:
Directions:
Layer ingredients in a large bowl.
Tomatoes, black beans onion and green pepper is the first layer.
( wet and tends to wilt the lettuce)
Add cooled ground beef.
Add shredded cheese.
Add lettuce and cilantro.
When ready to serve add Nacho chips and dressing, mix together.( I serve my Western dressing on the side)

My mom found this recipe somewhere, probably from a friend at church. (You know us Lutheran's, and our potluck dinners in the church basement)
This became one of mom's signature dishes. Mom has been gone 16 years this past May 2009. Each year I bring the taco salad to the Simons family July 4th celebration.
