Zest of 3 lemons
2 Tbl. sugar
1 Tbl. salt
1/3 cup plus 1 tsp. fresh lemon juice
3 Tbl. chopped fresh dill
4 8oz. halibut fillets or other firm white fish
1 Tbl. olive oil
3 Tbl. butter, cut into thirds

Directions:
Directions:
In small bowl, combine zest, sugar, salt, 1 Tbl. lemon juice & dill. Place fillets in shallow, nonreactive container. Cover with marinade & refrigerate 3 hours.

Remove fish & set marinade aside. Heat large saute pan coated with oil. Saute fillets until golden & cooked through, about 5 minutes per side. Remove from heat; transfer fillets to a platter. Cover with foil to keep warm.

Turn heat to high; add reserved marinade. When it bubbles & browns, add remaining lemon juice. Cook 1 minute. Reduce heat to low. Add butter, swirling pan to melt. Remove pan from heat. Pour sauce over fillets & serve.
