4 oz bittersweet chocolate
1stick butter
3/4 c sugar
3 eggs
1/2c cocoa powder

GANACHE
8 oz bitter sweet chocolate chopped
3/4c heavy whipping cream
2T butter

Directions:
Directions:
Preheat oven to 375. Butter 8" circle pan with wax paper on the bottom only, cut to fit.

Melt butter and chocolate in a double boiler, remove from heat once hot, whisk in sugar, add eggs and whisk well. Sift in 1/2c cocoa powder and whisk until just combined. Fill pan and bake 25 minutes, let cool 5 minutes then invert onto serving plate.

While cooking the cake, heat cream and butter over medium heat in the double boiler. Bring to just a boil whisking constantly, pour over chocolate and allow to stand 5 minutes then whisk until smooth. Pour over flourless chocolate cake. With the remaining let cool, then shape into balls and roll in cocoa powder or confectioners sugar and decorate the flourless chocolate cake with your truffles.

This is an extremely rich, decadent cake. Small slices are enough to satisfy any chocolate craving you might have. The cake itself is a mix between a brownie and fudge and the ganache is the truffle filling you find in expensive chocolates. Very delicious.
