1/2 c butter
4 tbls flour
1/4 tsp black pepper
1 qt half and half,(can sub 2% milk) divided use
13 oz. chopped green chilies (ortega or hatch can)
Shredded Cheddar cheese to garnish
Croutons or tortilla chips to garnish

Directions:
Directions:
Melt butter in the top of a large double boiler. Add flour and stir to mix. Add salt and pepper. Pour in 3 cups of the half and half, stir and continue to heat. Blend green chilies and remaining 1 cup half and half together in blender. When base sauce thickens, add chili mixture and stir. Serve in large bowls; garnish with cheese and tortilla strips
