1c flour
1T oil
2t sugar or 1/2 t salt (for meat ones)

Beat eggs, add milk, flour, oil and sugar/salt. Whip it, no lumps. (Whip it until it's foamy.) Very thin batter.

Lightly grease a skillet that's 275-300 Brown one side. Grease between each and every one or you won't get them off.

These are excellent, our favorite ones are the Peach melbas. Take a can of peaches, drain and cut up into small pieces. Warm up raspberry jam and sweeten an 8 oz package of cream cheese with confectioners sugar until it's sweet enough for you.

Spread the crepe with the sweetened cream cheese, drop clumps of peaches and roll up, pour some warm raspberry jam over the top and enjoy.

Use your imagination with these, the crepes are very versitile and can be used for sweet and salty dishes.
