1/3c cocoa powder
3T cornstarch
1 tsp flour
pinch of salt
2c milk
1t butter
1t vanilla
1/8t almond extract (optional)

Directions:

Whisk together dry ingredients. Add in milk and butter, whisk until smooth, simmer 1 minute, take from heat and add extracts, let cool.

This makes a delicious smooth creamy chocolate pudding that can easily be adapted to individual allergies. Use coconut milk instead of milk for lactose intolerance issues and all cornstarch for wheat allergies.
