1 medium carrot for color
1 large cup of (large curd) cottage cheese
1 small bell pepper
1 medium size onion
1/2 cucumber cut into quarters

Directions:
Directions:
Peel carrot with a peeler in small strips from top to bottom. If cucumber is small use of it.
Grind together in your grinder, drain through a sieve or press out most of juice.You must go to the sink and squeeze out all the juice through a screen or a cloth. Add to cottage cheese and sprinkle lightly with salt. Add 1 tablespoon of mayonnaise. Mix and set for about 6 hours.
Serve with crackers or small slices of rye bread.

My mother Martha Schantz Rambo gave me this recipe, she said her mother Agnes Schantz would make this on Friday so they would have a snack for the weekend.
