Bagged or canned sour kraut
Onion - some sliced and some diced
Bacon or Pork Back Fat
Salt and pepper
Sugar
Flour

Directions:
Directions:
Drain and rinse kraut in hot water, saving a small amount of kraut juice before rinsing. Add rinsed kraut to pot of boiling water, also adding some sliced onion. When above starts to boil again, reduce to a simmer-stirring quite ofter. In a frying pan add chopped onion and bacon or back fat. Simmer till onion gets a shiny look. When done, add some flour to the mixture to thicken. Once the kraut is soft, drain most of the liquid. Add the onion-bacon or pork fat mixture to kraut, season with salt and pepper. This always taste better the next day. If too tart, some sugar can be added.
