5 lbs. red potatoes
1 dozen eggs
Mayo
Half and Half
green onion-diced
carrot-shredded(optional, for color)
salt and pepper to taste

Directions:
Directions:
Boil potatoes with skins on until soft but firm. When cool, peel and dice potatoes. Boil eggs, peel and cut into small pieces, saving one egg to be sliced for the top of potato salad. Add potato and eggs to the mayo, onion and carrot mixture. Slowly add 1/2 and 1/2 to above to give it a creamy texture. Salt and pepper to taste. Slice remaining egg for top decoration, add red paprika for show.
