3 large ripe plum tomatoes, cut into 1/2 inch cubes
16 black or Italian olives, halved
8 large basil leaves, slivered
1/4 to 1/2 tsp. finely minced garlic
2 tbsp. extra-virgin olive oil
1 tsp. balsamic or red wine vinegar
freshly ground pepper
1/2 lb. ziti or penne

Directions:
Directions:
Combine tomatoes, olives, basil and garlic. Toss with oil and vinegar and pepper. Let rest at room temperature for at least 1 hour for flavors to mellow. Cook pasta, divide among 4 bowls and toss with sauce.
