1/2 cup butter at room temperature
1 cup sugar
2 eggs
1 1/2 cup flour
1 tsp. baking soda
1 tsp. salt
1 cup mashed ripe banana
1/2 cup sour cream
1 tsp. vanilla
1/2 cup chopped walnuts or pecans or mini-chocolate chips

Directions:

Preheat oven to 350 degrees. Cream butter, sugar, and eggs. Sift the dry ingredients and combine with butter mixture. Blend well. Add bananas, sour cream and vanilla; stir well. Stir in nuts or chips and pour into a 9 x 5 x 3 loaf pan or several smaller ones. Makes l6 regular size muffins or 10 to 12 of the large size. Bake a large loaf one hour, regular size muffins about 20 to 23 muinutes.
