1 qt. warm milk
1 c. mashed potatoes
3 c. sugar
lb. butter or lard
3 eggs
tsp. salt
2 pkgs. yeast

Directions:
Directions:
Scald the milk then cool to lukewarm while mixing the mashed potatoes, sugar, salt and butter into a large bowl. Slowly add the eggs and stir until creamy.
Dissolve the yeast in lukewarm water and add to the potato mixture. Alternately add milk and flour, kneading with a dough hook on an electric mixer until dough is elastic (about 4 to 5 minutes). Turn into a large greased bowl, turning the dough until all sides are greased. Cover and set in a warm draft-fee area.
Let rise until doubled (about 45 min). The dough at this point can be refrigerated overnight. Punch down to remove all bubbles. Divide dough in half and roll out to about 3/4 inch-thick. Cut dough in 3 inch squares making a 1 inch diagonal slit with a greased knife. Cover and let rise until almost doubled. Fry in 3 inches of oil heated to 370 degrees until golden brown on both sides. Drain on paper towels and shake in sugar while still warm
