3 Tbsp olive oil
1 medium onion, chopped
6 chicken breasts, cubed
3 medium potatoes, cubed
2 cups chicken stock
1 cup red wine
2 carrots, chopped
4 celery stalks, chopped
1 turnip chopped
1/2 small zucchini, chopped
1 tsp dried basil
1/2 tsp dried rosemary
1/2 tsp salt
1/2 tsp pepper

In a large pot, heat oil. Saute onion 2-3 minutes until translucent. Add meat and cook 5-7 minutes more. Meanwhile, place potatoes in microwave for 1-2 minutes on high. Add to the pot, potatoes, stock, wine, carrots, celery, turnip, zucchini, basil, rosemary, salt and pepper. Simmer about 15-20 minutes or until vegetables are tender. Serves 4-6.
