4 tsp extra virgin olive oil
1 Tbsp frozen orange juice concentrate
1 Tbsp balsamic vinegar
1/8 tsp salt
1/8 tsp freshly ground pepper
5 cups spinach
1/2 cup red onion slices
salt and pepper to taste
2 small oranges peeled, quartered and sliced

In a small bowl, mix together oil, orange juice concentrate, balsamic vinegar, salt and pepper. Place spinach, orange and red onion in a large bowl. Pour dressing and toss. Serve with a crisp French loaf.
