4 creole tomatoes
1 to 2 large cucumbers
1 small to medium red onion (can use white)
1/4 c. red wine vinegar
1/4 c. light tasting olive oil
salt and pepper

Directions:
Directions:
Slice tomatoes and cucumbers into a medium bowl. Cut onion in half and then slice each half making half circles of onion and add to the bowl. Pour vinegar and oil. Add salt and pepper to taste. Toss and serve. You can increase or decrease any of the quantities to fit the size of your group.
