5 c. cooked cubed potatoes
1 tsp. salt
2 tsp. sugar
1 tsp. celery seed
2 tsp. vinegar
1/2 c. chopped onions
1 c. chopped celery
1/4 c. green pepper
1 1/2 c. Mayonnaise
4 hard boiled, diced eggs (optional)

Directions:

Boil potatoes (in their jackets) and eggs together for 20 minutes until done (not mushy) and let cool. Peel potatoes and cube. Mix salt, sugar, celery seed and vinegar together and sprinkle this mixture over the cubes. Toss lightly using a spatula. Add onion, celery and green peppers, then Mayo. Mix well. Fold in eggs and chill.
