3 eggs
1 c oil
2 c sugar
3 tsp cinnamon
1/4 tsp baking powder
2 c grated zucchini
3 tsp vanilla
3 c flour
1 tsp baking soda
1 tsp salt

Directions:
Directions:
Beat eggs till foamy. Add oil, sugar, zucchini and vanilla
Beat lightly and add dry ingredients.
Bake 350 for 1 hour or until done.

Makes 3 small loaves.
May add raisins, craisins, nuts.
