2 cups whipping cream
1- 5oz pkg Boursin cheese with herbs
3 pounds red new potatoes , unpeeled, scrubbed, thinly slice
1 1/2 tbsp chopped fresh parsley (opt)

Directions:
Directions:
-stir cream and cheese in sauce pan over med. heat until cheese melts and mixture is smooth
-place 1/2 sliced pot. in dish with salt and pepper
-pour half of cheese mixture
-repeat using remaining pot and sauce
bake at 400 degrees in 9x13 greased baking dish for 1 hour or until potatoes are tender
sprinkle with parsley and serve
