4 large sweet potatoes, boiled, drained, and mashed
1/4 tsp. salt
1/4 cup Butter or margarine, softened
2 eggs, lightly beaten
1 tsp. vanilla
1 tsp. cinnamon
dash ginger or to taste
1/3 cup sugar
1/4 cup butter or margarine, melted
3 tbsp. flour
3/4 cup brown sugar
1/4 cup chopped pecans (optional)

Directions:
Directions:
Preheat oven to 350. Mix together mashed sweet potatoes, salt, butter,eggs, vanilla, cinnamon, ginger and sugar. Pour into greased 1 1/2 quart (1.5 L) casserole. Mix together butter, flour, brown sugar and pecans; pour over potato mixture. Bake for 30 minutes.

OR instead of using the brown sugar topping you can cook potatoes without topping and about 10 minutes before cooked top casserole with colored miniature marshmallows and brown in oven.
