4 boneless, skinless chicken breasts (thin-sliced is best)
2 T. butter
1 tsp. thyme
2/3 c. mayonnaise
1/3 c. sour cream
1/3 c. Parmesan cheese

Directions:
Directions:
Preheat oven 350. Saute chicken in butter for 5 min. on each side or until slightly brown. Arrange chicken in shallow baking dish. Sprinkle chicken with thyme. Combine remaining ingredients in separate bowl. Spoon mixture over chicken. Bake uncovered for about 40 min. (25 for thin-sliced), or until golden brown. (Only 2 carbs. per serving!)

Jacqui is the wife of Richard "Dick" Hollenshead and the daughter-in-law of the late Clyde and Armenta (Scott) Hollenshead. I always use thin-sliced chicken breasts and I always double the recipe, enough for the 4 of us, plus a bit left over for lunch. The kids LOVE this and ask for it often, which is rare for my children.
