Cake:

2 cups flour
2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
2 eggs
1/2 cup oil
1 1/4 cups sugar
1 tsp vanilla
3 to 4 mashed bananas
3/4 cup buttermilk or soured milk


Cream cheese Icing:

1/2 cup butter or margarine
1 pkg cream cheese (250g)
1 tsp vanilla
2 cups icing sugar
1 tsp orange juice
1 tsp orange peel

Directions:
Directions:
Cake: In a bowl, mix dry ingredients (first four). In a larger bowl beat eggs with electric mixer, then add oil, sugar, vanilla, and bananas. Mix well. Add flour mixture to banana mixture alternately with milk, beginning and ending with dry ingredients. Put into 2-9" round cake pans. Bake at 350F for 30-40 minutes. Makes one four-layered cake. Icing: Whip butter and cream cheese until fluffy. Add other ingredients. Mix until smooth. Assembly: Let cake fully cool. Cut rounds into four layers. Ice each layer for extra goodness. The cream cheese icing is what makes the cake. The orange peel and juice in the icing are what this cake is all about!
