1 1/2 lbs boneless chicken breast or tenders
1 cup ranch dressing
1/4 tsp salt
1/4 Spice Island pepper
2 cups shredded Monterey jack cheese
2 tbsp chili con carne chili seasoning
1 pkg. (24 count) wonton wrappers
1 cup finely chopped red or green bell pepper
Salsa, sour cream, lettuce, guacamole

Directions:
Directions:
Place chicken in a single layer in a 12" skillet. Add water to cover. Bring to a boil, reduce heat to simmer and cook for 20 mins. Drain and cool slightly. Shred chicken with a fork. Mix with dressing and season with salt and pepper. Set aside. Combine cheese with chili seasoning. Preheat oven to 350. Spray 2 muffin pans with cooking spray. Place one wonton wrapper in each muffin cup. Bake for 5 mins until lightly brown. Remove from oven and cool. Spoon a generous tablespoon of chicken filling into each wrapper. Sprinkle with cheese mixture, then bell pepper. Return to oven and bake another 10 mins. Serve with salsa, sour cream, lettuce, and guacamole.
