6-8 large potatoes, peeled, cooked and mashed
1 cup sour cream
8 oz. cream cheese, softened
milk, if needed
2 tsp. salt
1/2 tsp. pepper
2 tbsp. chopped chives or green onion tops
1/4 cup butter or marg.
1, 10oz pkg. frozen spinach, thawed and squeezed dry
parmesan cheese

Directions:
Directions:
In a large bowl, combine all ingredients except cheese. Can add milk if it is too thick. Spoon into a greased 2 quart casserole. Sprinkle with parmesan cheese. Bake, uncovered, at 400 for 25 minutes. If made ahead of time and chilled, increase baking time.
