2 cups flour
2 cups sugar
1 tsp baking powder
1 tsp baking soda
1 tsp cinnamon
3 cups finely shredded carrots
1 cup canola oil
4 eggs

Directions:
Directions:
Grease and lightly flour a 13X9X2 inch baking pan or two 9 inch round baking pans and set aside. In mixing bowl, combine flour, sugar, baking powder, baking soda, and cinnamon. Add carrots, oil, and eggs and beat with electric mixer until combined. Pour into prepared pans and bake in 350 oven for 35 minutes for round pans and 40 minutes for 13X9 inch pan, or until toothpick comes out clean. Cool thoroughly and frost with cream cheese frosting. Cover and store in refridgerator.
