2 lbs. potatoes (6 medium),
1 1/2 c. cubed fully cooked smoked ham,
3 T. butter,
3 T. flour,
1 t. salt,
1/4 t pepper,
2 1/2 c. milk,
1 small finely chopped onion,
1 T. butter.

Directions:
Directions:
Wash and peel potatoes. Cut into enough thin slices to measure about four cups. Heat 3 T butter in saucepan over low heat until melted. Stir in flour, salt and pepper. Cook over low heat, stirring constantly, until mixture is smooth and bubbly; remove from heat. Stir in milk. Heat to a boiling, stirring constantly. Boil and stir one minute. Spray 2 qt. casserole with Pam. Arrange potatoes in three layers, topping each of the first two with onions and 1/3 of the white sauce and 1/2 the ham. Top with remaining potatoes and sauce. Dot with butter. Cover and bake at 325 oven for 30 minutes. Uncover and bake until potatoes are tender, 60 to 70 minutes longer. Let stand for 5 minutes.
