10 c. squash, sliced thin
2 c. onion, sliced in pieces
1 (lg.) jar red pimento or a sliced red bell pepper
2 tsp. mustard seed
2 tsp. celery seed
2 tsp. Tumeric
1/4 c. salt
2 c. vinegar
2 c. sugar
1/2 fresh jalapeno, optional

Directions:
Sprinkle salt over squash, onion and bell pepper (or pimento). Hand toss and let set for 1 hr. Drain and rinse well. Mix vinegar, sugar, mustard seed, celery seed and Tumeric. Bring to a boil. Add squash, onion and bell pepper and return to a boil. Put in jars (add jalapeno, if desired) and process in boiling water for 10 min.
