1 lb. ground beef
1 onion, chopped
1 can diced tomatoes
1 can tomato sauce
8 lasagna noodles
1 (lg.) pkg. of sm. curd cottage cheese
sliced Swiss cheese
Italian seasoning

Directions:
Directions:
Preheat oven to 375. Cook noodles in boiling water. Brown the ground beef and onion. Add the tomato sauce and tomatoes. Season to your liking with the Italian seasoning. Take the meat mixture off the stove and stir in the cottage cheese. Put one layer of noodles into your pan. Add about 1/2 the meat mixture. Layer the Swiss cheese. Repeat. Sprinkle the top layer with Parmesan cheese. Cook at least 30 to 45 min., until the top layer of cheese is melted.

Suzanne is the wife of Alvin Ray "Rayboy" Hollenshead and the daughter-in-law of the late Alvin Ray and Fern (Prince) Hollenshead. Serve with a salad and garlic bread. Kelly shared this recipe with a group of Scrapbooking friends when we visited her in St Louis this year.
